Creamy Broccoli Potato Soup

For some people, it’s a challenge to eat healthily during winter because we just want to load up on the comfort foods!  Here is a great soup to make that is easy, will satisfy but is super healthy.  This makes enough for 5-6 people.


4 peeled medium potatoes

4 cups almond milk

1 brown onion

2-3 cloves of garlic

1 avocado

1/3 cup green onions (shallots)

2 cups frozen broccoli

2 Tbsp Veggie stock paste (mine is homemade)

Pepper for taste


I use a Bellini kitchen master which makes healthy cooking so easy.

  1. Sauté onion and garlic.  (I use the Bellini to chop and sauté for me.  Time 4 sec speed 6.)
  2. Add potatoes, almond milk & stock paste. Bring to a boil.  Stir regularly. (On the Bellini: set Time 25 min speed 2.  100 degrees)
  3. After 10 mins add in avocado & green onions as your soup is stirred.
  4. Add more water or milk depending on your preference of thickness.
  5. Add pepper to flavor.
  6. Enjoy!
